Will Gruy, a native Texan and former motorcycle racer who spent part of his childhood in Italy, opened Pizza Motus because he missed the unique crispness and flavor of the pizza he ate as a kid on the streets of Rome. The Roman-style pizzeria in West U uses imported high protein flour, a high percentage of water and minimal yeast to produce and light, airy and crispy pizza that Houstonians will surely love.
Diners can enjoy their rectangular pizza inside the light filled restaurant or pick it up at the window outside and take it to go. On the menu, find pizzas like the caprese, a white pizza with burrata, tomatoes and basil, eggplant parmesan, and Hawaiian. Several pizzas are available by the slice making it easy to walk up and take one as a snack to go. Paninis, grain bowls and salads are also part of the menu.
Pizza Motus is open Tuesday to Sunday from 11 a.m. to 9 p.m.
