Coltivare, a new rustic Italian concept from the boys behind Revival Market, has made a home in the Heights.

Ryan Pera and Morgan Weber opened the sister property to Revival just around the corner at White Oak and Arlington streets. In keeping with Revival’s devotion to local and regional produce and ingredients, the trattoria prepares a variety of small plates, salads, house made pastas and wood-oven fired pizzas along with dishes such as Garganelli with slow braised beef ragu and Revival pork roast with clams and chorizo over heirloom polenta.  In the Heights tradition, the restaurant offers “private club” membership with a unique wine list and full bar.

Chef Pera, whose Italian heritage has always played a central role in his culinary style, leads the menu development and collaboration.  Chef de Cuisine Vincent Huynh, who previously spent time cooking in Revival Market’s kitchen, oversees the day-to-day kitchen operations.

Revival Market's philosophy and relationships with local farmers and purveyors of Texas beef, dairy and Gulf Coast seafood continues strong at Coltivare. Pera’s preference for “family style” dining is key to the concept at Coltivare.

A 3,000-square-foot garden provides both the trattoria and Revival Market with fresh seasonal vegetables, fruit and herbs.

Coltivare is open for dinner and weekend brunch.
